Method
Using a cocktail smoker or smoking gun with fragrant wood chips – such as hickory, applewood, or cherry wood – allows you to control the intensity and flavor profile of the smoke.
The trick is to smoke the drink just enough to give it a bit of aroma and taste without overwhelming the bourbon’s complex flavors.
  1. Add sugar, bitters, and water to a rocks glass. Stir until the sugar is mostly dissolved.
  2. Add the bourbon and a single large ice cube. Stir to combine.
  3. Squeeze an orange peel over the drink to express its oils. Then, drop it in.
  4. Carefully following the instructions, use a cocktail smoker or smoking gun to smoke your old fashioned.
